Tajarin is the regional name of Tagliolini. They’re made by kneading durum wheat semolina with fresh eggs, and produced according to basic principles of homemade pasta preparation: artisan working, bronze die shaping, low temperature drying. Truffle slices in oil are prepared simply by slicing a whole fresh truffle, immediately putting it in oil, in order to completely capture its full intense fragrance.
