Doge’s cake is made, according to the XVII century original recipe, by a dough of wheat flour, eggs, sugar, honey and butter, enriched by coarse cuts of figs and walnut. It remembers a short panettone, but it’s quite lighter than a panettone, since fig and walnut flavour have to stand out. Its surface is dressed by icing sugar.
